4 large eggs

1/2 cup coconut flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking powder
1 teaspoon lemon zest
1/2 teaspoon ground ginger
1/4 teaspoon sea salt

How to Make It:

Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C).

Prepare Loaf Pan: Lightly grease an 8.5×4.5 inch glass or metal loaf pan. Place a piece of parchment paper on the bottom of the pan to prevent sticking.

Blend Wet Ingredients: In a high-speed blender or food processor, combine eggs, sunbutter, maple syrup, pumpkin puree, palm shortening, lemon juice, and vanilla. Puree for 30 seconds until the mixture is smooth and creamy.

Add Dry Ingredients: To the blended mixture, add coconut flour, cinnamon, nutmeg, baking powder, lemon zest, ginger, and sea salt. Blend again for 30 seconds until the ingredients are well combined.

Pour Batter: Pour the batter into the prepared loaf pan, spreading it evenly.

Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool in Pan: Remove the loaf from the oven and allow it to cool in the pan for 15 minutes.

Cool Completely: After cooling in the pan, transfer the loaf to a wire rack to cool completely before slicing or serving. This usually takes about 2 hours.

Store: Store the gluten-free pumpkin loaf tightly wrapped in the refrigerator.
